Opened on 23rd of December 2017 Niseko Bion aims to bring you the best & Freshest Hokkaido meat; seafood and seasonal vegetables on a traditional Italian firewood cuisine style.
Boasting a carefully curated list of Italian and Australian wines that pairs excellently with the course menu and an open kitchen , counter seats and tables that allows you to see and interact with the chef for a richer and more enjoyable experience.

Niseko Bi-on combines the finest imported Italian goods with locally sourced ingredients to achieve the highest levels of culinary quality.

Simply amazing meal. Meat cooked on an open fire, home made ice cream. Chef has skills. Amazing. Definitely recommend eating here.

We randomly stumbled upon Bion after being told it was great by some locals. It’s a bit hard to find but well worth the effort. Food was amazing - and there was lots of it. Really interesting dishes as well with a mix of Italian and Japanese influences. Definitely recommend.

Wow! Once in a while you can be blown away by food at a restaurant. This was one of those occasions. The seafood was super fresh with local oysters and whelk particularly delicious. Other highlights included the stuffed whole squid and roasted rolled porchetta. We enjoyed the cozy setting and open kitchen, with Chef Matsuoka happy to answer any questions and discuss local food. We will definitely be coming back.

Niseko Bi-on offers a course menu system, with three options 10.000; 15.000 and 23.000 Yen per person.

Our Chef

Chef Naoki Matsuoka

Matsuoka has extensive cooking and training experience in Italy, France and Singapore, he currently operates his own Italian style restaurant in Chitose for over 15 years.

His goal is to bring the highest level Italian cuisine with notes of traditional Japanese culinary art to Niseko using only the best available ingredients for your delight.
